On the morning of 16th September, women from various communities gathered for an enlightening excursion into the world of fish farming. We had 87 participants present at the training. The event, masterfully organized by TA Community, a reputable non-profit organization, sought to empower these women with knowledge, skill sets, and sustainable livelihood opportunities in partnership with Best Multi Services Global Resources.

The day began with a brief orientation about safety protocols and the objectives of the excursion. This was followed by an introductory session that shed light on the significance of fish farming in today’s world. We started off by visiting a tilapia fish farm, where we were introduced to the different species of tilapia fish. The owner of the farm showed us around the farm, showing us the various parts of the farm. Then we visited the hatchery, where the feeds for the fishes are made.

 

Fish farming, also known as aquaculture, is gaining global traction as a sustainable means of food production. For these women, many of whom have faced economic challenges and limited opportunities, diving into fish farming can be an avenue to financial independence and food security. By introducing them to this field, TA Community aims not just to impart knowledge but also to instill a sense of purpose and capability amongst the participants.

 

The heart of the excursion was, undoubtedly, the tour of the fish farm. Acres of shimmering ponds greeted the participants, each holding its own unique species of fish. The sight was both serene and informative. Participants could see firsthand the operations of the farm.

 

A special segment of the excursion was dedicated to a hands-on experience. Participants were taken through every step of the process:

 

  1.  Selection of Fresh Catfish: Emphasis was placed on choosing the best fish for smoking, focusing on factors such as size, freshness, and health of the fish.
  2.  Preparation and Cleaning: Proper techniques for cleaning the fish to ensure optimal taste and hygiene were taught.
  3.  Brining and Marinating: The women learned about different marinades and brining solutions to enhance the flavor.
  4.  Smoking Techniques: Different smoking techniques were demonstrated, including traditional methods and more modern approaches using specialized equipment.
  5.  Packaging and Storage: Post-smoking, participants were trained on how to package their product for sale and the best storage practices to maintain freshness.

 

THE PROCESS

The proper way of killing the fish is to dehydrate it. This is done by taking the fish out of water into a bowl and adding salt to it, and leaves for about 5-10mins. Using salt is not only the most accurate method, it is also a hygienic method as it also gets rid of germs and dirt’s from the fish’s body.

After this process, wash the fish properly with clean water and prepare to degut. Degutting is done by using a clean razor blade to slice open the belly and bring out the intestines. After this process, clean the fish properly and set aside to fold.

The folding method involves using processing sticks, the stick helps hold the fish in place while smoking it. After folding is done, transfer into the oven. An advantage of using an oven is that it avoids releasing carbon content to the fish unlike when using firewood. The oven is usually galvanized, meaning the heat from the coal is what usually dries the fish. It takes about 10 hours to dry a fish to biscuit level.

 

Also, we got to know about fish oil found inside the fish. The fish oil (omega 3 oil) is highly nutritious and also economical, it can be used for cooking, used in the pharmaceutical industry (supplements containing omega 3 oil) and also used in the beauty industry (cosmetics).

HOW FISH FAT OIL IS MADE

After extracting the fish fat from the inside of the fish (it is usually in clouts), heat up an empty pot and put the fat inside the pot to melt it. After melting, it’ll produce oil which can be used for various purposes.

Fish oil is a business on its own, you can produce oil for not just personal consumption but for also sales. The quantity of oil produced is dependent on the quantity of fish you have available.

Overall, the training was impactful and engaging. Participants got to learn a new skill and learn how to monetize it.

 

 

 

TIPS FOR CATFISH PROCESSING

– Salt is used in the process because it acts as disinfectant and also used to dehydrates the fish.

– If the fish comes from an earthen pond you need to remove the gills.

– Oven drying method prevents the fish from getting direct contact with fire which in turn preserves nutrients in the fish.

-It takes about 10 hours to dry to biscuit level. Heat dries the fish when oven is used and not fire.

– Don’t eat all your fish fat, you can make a business out of it. Fish oil is expensive in the market, contains omega 3.

– Fish oil can be used for different purposes which includes cooking, adding to fish feed etc.

– It is better to fold the fish with stick than toothpick because it keeps the fish in shape.

– It can be garnished with different spices depending on individual or customer preference.

-To get the fish fat after degutting the fish: you can pour the removed intestines in a bowl and pour water. The fish fat will float.

 

Furthermore,by promoting fish smoking, TA Community is advocating for better nutrition in these communities. Smoked catfish is a rich source of protein, omega-3 fatty acids, and other essential nutrients. By making it readily available and teaching people how to produce it, they’re ensuring better health outcomes for these communities.

 

The fish farming excursion was more than just a day’s event; it was a seed sown towards a brighter, sustainable, and empowered future for these women, these women now possess not just the knowledge of fish farming but a network of support and a renewed sense of purpose.
